Cherry Almond Cake

I know, I know. I’m actually posting a non-chocolate recipe. There are few things that I enjoy as much as I enjoy chocolate. Vacations. Lobster truffle mac and cheese (just discovered at cute Sunnyside spot Côté Soleil while out to dinner with the talented and endearing Moni Begum of Moni’s Kitchen). Moroccan almond cookies made by La Rose Kitchen. Actually, any almond dessert is fabulous. Rainbow cookies. Marzipan (yup, straight up). Stollen (German holiday sweet bread with marzipan filling).

So cherry almond cake was a no-brainer. Last week I had made a cherry frangipane (fancy word for almond filling) tart. Recipe from NYTimes. It was SO good, but since there’s already a perfectly good recipe out there, I wanted to share a less-fussy version of the dessert for those who may not have the time or desire to make pâte sucrée, chill it, roll it out, fit it, trim it, blind bake it, then fill and bake once more.

The answer is this single layer cherry almond cake. A standard beginning of creamed butter and sugar with the addition of 2 tbsp of almond paste that has been sitting in my cupboard FOREVER. Thickened with an egg, flavored with almond extract. Finally beefed up with a cup of flour, leavener and salt. I greased and lined a 9 in cake pan with parchment. Then I poured in the batter, smoothed out to the edges, dotted the cherries throughout for an even distribution, topped with slivered almonds and sugar, then baked for about 45 minutes.

I used defrosted, drained frozen pitted cherries for this. Fresh cherries would have been out of this world, but I wasn’t about to try to pit 14oz of cherries! Fresh or frozen, it’s a delicious cake, but I would decrease the sweetness next time around. I adapted it from a Cooking Light recipe (I increased the fat content so could use a lower sugar content). Feel free to try it either way!

Ingredients

  • 6 tbsp unsalted butter
  • 2 tbsp almond paste
  • 2/3 cup granulated sugar (would decrease to 1/2 cup next time)
  • 1/4 tsp almond extract (might increase this to 1/2 tsp next time)
  • 1 egg
  • 1 cup flour
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/8 tsp cloves
  • 1/3 cup milk
  • 2 tbsp slivered almonds
  • 2 tbsp granulated sugar
  • 14 oz pitted cherries
  • powdered sugar for sprinkling

Directions

  1. Preheat oven to 350 degrees F. Spray the bottom and sides of a 9in cake pan with cooking spray, Cut out a 9in round piece of parchment and line the bottom of the pan with it. Spray with more cooking spray.
  2. In a medium bowl, sift together the flour, baking powder and clove. Add salt and stir to combine.
  3. In the bowl of a stand mixer or in a medium bowl using an electric hand mixer, cream butter, sugar and almond paste until light and fluffy, about 2 minutes at medium low speed. Stop to scrape down the sides of the bowl. Add egg and almond extract, continue beating until the egg is incorporated, then scraped down the sides of the bowl again. Add half o the flour mixture, then the milk, then the remaining flour. Mix until incorporated, then pour into the prepared cake pan. Dot the top with cherries, almonds and an even sprinkling of the remaining granulated sugar.
  4. Bake in preheated oven for 45-50 minutes until top is golden brown.
  5. After cooling, sprinkle with powdered sugar to serve.

Eton Mess

Eton Mess aka Eat-A-Mess. Named for the school where it was first served – Eton College, presumably in the mess hall. For some reason I am surprised when people aren’t familiar with this dessert. I mean, didn’t everyone watch the episode of Barefoot Contessa when Ina Garten cooked a charity luncheon for Alec Baldwin and the lady from Law and Order?? I mean, she made Alec buy her groceries from a farm stand. CLASSIC INA.

I made this dessert for the first time this week, for a small party I catered for Sukoon Active – a modest athletic wear company. They had their Kickstarter Launch Party and I was there serving up mocktails and small bites. Catering is a lot of work, but so much fun!

Traditionally made with strawberries, Ina adds a twist by making a raspberry compote. I didn’t think I was a fan of raspberry desserts until I tried this. Wow – it is so delicious I sometimes steal a spoonful of the stuff when nobody’s looking. I omitted the Framboise (raspberry liqueur) from the original recipe, and it still came out great. The tartness from the lemon juice, the flavor of the raspberries, and the sweetness of the sugar all play the most amazing balancing act. Add that to whipped cream and crushed meringues, and it’s essentially a play on my pavlova. Nothing beats the textures and flavors of the three ingredients combined. It was definitely a hit at the party!

I copped out when making this dessert a second time. I used the whipped cream from a can because I ran out of heavy cream. Don’t judge!

Recipe adapted from Ina Garten.

Ingredients

  • 4 6oz. packages of raspberries
  • 1 cup plus 3 tbsp sugar
  • 1 tbsp freshly squeezed lemon juice
  • 1 1/2 cups cold heavy cream
  • 1 tsp vanilla extract
  • 1 cup crushed meringues (available at Trader Joe’s and sometimes by the deli section of my local grocery)

Directions

  1. Combine 2 packages raspberries, 1 cup sugar and 1 tbsp lemon juice in a medium saucepan. Crush the berries lightly with a fork and cook over medium high heat until the mixture comes to a boil. Lower the heat and cook for about 10 minutes until the mixture thickens. Turn off the heat and add the remaining two packages raspberries. Fold into the mixture gently then refrigerate until very cold.
  2. In the bowl of your stand mixer or in a large bowl with a handheld mixture, beat cream with 3 tbsp sugar and vanilla until stiff peaks form.
  3. To crush the meringues, place them in a large ziploc bag and close tightly. Bang them with a rolling pin or something similar until you get small pieces.
  4. Layer about 1 tablespoon of the whipped cream, 1 tbsp raspberry compote and 1 tsp crushed meringues in a dessert cup or glass. Top off with whipped cream and enjoy immediately.

Pumpkin Cupcakes

I usually shy away from pumpkin spice anything. It’s just not my cup of tea. But a few weeks ago our family went to Wightman Farms in New Jersey, where they attempt to ameliorate the hurt inflicted on your wallet from overpriced hay rides with complimentary pumpkins. Thus, I had 4 pumpkins and a whole lotta cooking to do. I made a pumpkin bread which was a bust (recipe said to bake in two 8×4 loaf pans; I brazenly baked it in a single 10×5 in pan and sadly watched through the oven door as it never rose), a pumpkin pasta which was delish, and finally, these fabulous little bites. Important to note that my homemade pumpkin puree is thinner than the canned ones, but I think since this recipe uses vegetable oil and not butter, you should be fine. IMG_5142I whipped these up without a recipe to refer to (hence most of the amounts are 1, 1, 1 [1 cup sugar, 1 cup flour, 1 cup pumpkin, etc.] but hey, it works!) and without even being sure if the end result would be a cupcake or a muffin. Since I wanted to practice my piping, I frosted them with a cream cheese frosting – so I guess they are officially in Camp Cupcake! They are so moist you can serve as a snack without the frosting.

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup pumpkin puree*
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour (could omit this and use all all-purpose flour)
  • 1/4 tsp cinnamon (can increase to 1/2 tsp if you prefer)
  • 1/8 tsp ground clove
  • 1/4 tsp kosher salt
  • 1/2 tsp baking powder (make sure it’s fresh! i.e. not older than 3 months)
  • 1/4 tsp baking soda (same)

Directions

  1. Preheat oven to 325 degrees F. Spray either a mini muffin pan or a standard muffin pan with non-stick spray.
  2. In the bowl of a stand mixer (or in a large bowl using a handheld electric mixer), combine both sugars with vegetable oil and beat for a minute. Add egg and continue beating. Add pumpkin puree and continue beating for another minute.
  3. In a separate bowl, combine flours, spices, salt and leavening. Whisk a few times.
  4. With the mixer on low speed, slowly add the dry ingredients just until combined. Scoop batter into prepared pans to about 3/4 way up. If using the mini muffin pan, bake for 15-17 minutes until a toothpick inserted in the center comes out clean. For a standard muffin pan, bake 18 to 20 minutes.
  5. If you choose to frost them, allow them to cool to room temperature. Frost with a cream cheese frosting.

*To make the pumpkin puree, I peel a pumpkin similar to how you would peel a butternut squash – with a big knife, going from top to bottom, around on all sides. Scoop out seeds, chop, then place in a large wok or pot with 1/2 inch of water. Bring to a boil then reduce heat. Simmer until tender. Blend in a food processor.
